Somehow I don't think that's it. Noise is not a big consideration on a racecar. It's got to be one of these, I think:
1. More aerodynamic
2. Less likely to be sheared off with door to door contact
3. Cheaper
4. Provides better visibility

Racing mirrors do not have to "fold" to reduce pedestrian injuries like road car mirrors. The previous Cup car's mirrors were also different to the road car's, so it's not a question of staying with the old "obsolete" road car design.
Also, I doubt that the super-light Cup door would have the stiffness to carry the production car's heavier long-stalked mirror without generating too much vibration to allow the driver to see anything in the mirrors.

5. They look snazzier? Those wheels are really nice, tho.

Interesting. OTOH Ferrari kept the same mirror that's on the 430 and put it on their Challenge car.

I mean that side offer more air resistance than what it may look, the smaller cup mirrors are more aerodinamic.
Remember the 9FF Porsche that set that top speed record in that tunner competition? They removed the right side mirror completely and left only a very small left mirror for that reason.
Another example is when RUF was building the Ruf Turbo (based on the 996), they decided to design new smaller mirrors like the cup car's in order to achieve a few mph more in top speed. Just by changing the mirror.

And on the Ruf 993 and earlier models, they would remove the rain gutters for siginificantly higher top speeds too...

Avant - on the 993 and earlier 911's, the rain gutter ran up the A-pillar and over the door. This keeps you dry when entering/exiting the car, but it causes alot of aero drag. Ruf would cut/grind these off and repaint. It gave a much more slick aero profile, so it raised top speed since less power was wasted pushing through the air at close to 200mph...

I really like the lookf of the GT3 cup car! Looking at these pictures, I think where Porsche could've made the 997 more aggressive looking would be by having the turn signals still integrated on the round headlights and having the oil cooler air inlets extend up into the area where the turn signals/fog lights are now. The air intake on the bottom edge of the hood is also good looking.
