Somehow I don't think that's it. Noise is not a big consideration on a racecar. It's got to be one of these, I think:
1. More aerodynamic
2. Less likely to be sheared off with door to door contact
3. Cheaper
4. Provides better visibility

Remember the 9FF Porsche that set that top speed record in that tunner competition? They removed the right side mirror completely and left only a very small left mirror for that reason.
Another example is when RUF was building the Ruf Turbo (based on the 996), they decided to design new smaller mirrors like the cup car's in order to achieve a few mph more in top speed. Just by changing the mirror.
