Racing mirrors do not have to "fold" to reduce pedestrian injuries like road car mirrors. The previous Cup car's mirrors were also different to the road car's, so it's not a question of staying with the old "obsolete" road car design.

Also, I doubt that the super-light Cup door would have the stiffness to carry the production car's heavier long-stalked mirror without generating too much vibration to allow the driver to see anything in the mirrors.
