Short and simple answer:
Sport setting does not in any way change the torque/power that your engine is capable of producing. It just changes the "connection" between your right foot and the engine to make the engine react more spontaneously to your foot's inputs.
You could achieve the same effect by moving your foot more quickly.

Great responses, thanks guys. It does drink more juice, but I am addicted to the instant feel. I can at least dream I am going faster, that I am on the Mulsanne straight leading on the last lap of LeMans, that I will win and be rewarded by Porsche with any car I want forever.

Welcome to the Sport Button Club. 
I do the same with my X5 M...M button active all the time, incl. MDM (M Dynamic Mode).
Even now, we had lots of snow in Bavaria, I'm driving with the M button activated. Yes, the car isn't always perfectly stable but this actually increases the fun. The ESP reaction has been reduced to a minimum and throttle response is great. If I would switch to gearbox S mode too, throttle response, shifting, etc. would be even better and sorry to say that, faster than even in the new Cayenne Turbo with sport chrono activated. This is where BMW did a better job than Porsche, there is no (turbo) lag in this mode, absolutely zero. Some people may not like this because the throttle response is very nervous and shifting is very harsh but I just love it.
I suggest car manufacturers offer three different settings: normal-dynamic-sport. Two different modes is just not good enough.

And that is the point RC - sport button, dynamic mode, shifting time - what about the off-road mode, the center gear locks, the reduction gear, etc.....
Who cares about that on a high performance SUV ? 
We had a lot of snow lately in Bavaria and I hadn't a single problem to drive in this snow (ask my wife what happened to her and her M3 Cab....she got stuck a couple of times 
). Now my wife wants to drive my car...
