I've done bit over 700 laps so far in GTR, and YES, it definately is the best sim available (IMHO)!!! Extremely realistic, but - as you said - also very difficult. Still after hundreds of laps, when I try a new track or car, I spin at least once every other lap
To get the most out of this sim, you'll need a good force feedback wheel, such as Logitech MOMO Racing etc., no joystick can do this game justice!
The sounds of the engines are magnificent - all of them are actual recordings of the real things. Have to say though, the 996GT3 sound was a bit disappointing. Somehow it just doesn't sound right, too "zzinggy" maybe
Then again, I havent heard the real things live going round a track, let alone been passanger in one, so maybe that's how it sounds. The 993GT2 on the other hand sounds very delicious
Anyway, what I think is the most amazing thing in GTR, is how every car manages to FEEL different (using FFB wheel of course). For example, the 911s steering's noticeably lighter than the middle- and front-engined machines'. But that's not all. It's difficult to explain, really, but they all do somehow feel different.
I've also read many comments/interviews of real FIA GT -drivers and others who've driven some of these cars, and invariably they've stated that the cars behave very much like in real life! Also, the tracks seem to be modelled with extreme accuracy.

Interviewer: "During the development of GTR, did a time ever come when all of a sudden you just felt... an 'epiphany' of sorts with GTR - that is, one of those 'ooh, ahh' moments that told the team they had something 'really special'?"
Ian Bell: "When we sat watching a FIA GT racing driver being dragged out of the simulator as he was late for qualifying, the team dragged him out and he had to sprint to the pit box. He was back 30 minutes later after doing his stint, in the queue behind the other drivers."
