To answer your questions. It is the same as the gen 1 cars in that you can put it in sports mode but then put the PASM in normal mode by pressing the PASM switch.
Given the condition of UK roads i tend to keep it in normal mode most of the time. I have put it in sport mode and it is great when the road surface is good, but can knock the fillings in your teeth out when the road is poor.
From memory for what it is worth i find the system very close to what is in the current GT3, so maybe take a test drive in one of those before deciding ?
