Since the assembly of the car is so modular it's possible to retrofit many of the components. Wiring harnesses are usually complete for all options wether or not the car has been ordered with them.
BUT When you find out how much new mirrors will cost you you'll probably decide it's "impossible."

No don't know anybody who has done mirror change specifically. But there are accounts of all sorts of options being easily (but costly) retrofitted. For example: I hear all cars have the wiring for the rear window wiper. There is also supposedly wiring in place for heated seats in all cars. Would be no surprise to find out all cars have the wiring in place for the autodim mirrors.
You just have to call the service people and find out for sure. Don't forget to report back to us.

hence I've ordered/configured the car with them

Believe that their retrofit was for only the interior mirror only. It did not include the driver exterior mirror, as was included with factory install.
With the 997 both driver & passenger mirror dim.
Best to go factory if you can or suffer, and wish you had ordered Option 267

Another way to look at it. The self dimming mirrors aren't THAT great (in my M3). In most evening driving situations I still have to tilt them down so the reflection of the lights behind me isn't in my eyes even though the mirrors are dimmed. IOW, in BMW they don't dim enough to be comfortable in all lighting/darkness situations. Are the 997 mirrors going to be the same as the BMW version?

I've never had a problem with the 997 mirrors - they start dimming pretty quickly at dusk, and I've never been dazzled by cars behind be.
Some people do complain that they are too tinted, even to the extent that at night all you can see is white dots, and very little of the outline of the cars.
I guess its a matter of preference - personally I like them.

Apparently, the retrofit is not possible (yet). This is what I received today:
"I appologize for the delay. I had to contact Porsche in Germany. There does not exhist an exact retrofit kit.. however, some have replaced just the glass/ mirror. We do not recomend it. Any questions or concerns, please contact us at..."
