What have been yours?
One that comes to mind with my orange 997 GT3 RS was on the way to Spa together with the green one of my colleague. We'd have had a very brief sprint on the autoroute which took us somewhat over what was -in theory- allowed on that stretch. No harm done, we'd seen no police anywhere, but suddenly the traffic seemed to magically have dried up, we could see a police car behind us weaving over the width of the autoroute holding up all traffic behind us. We casually cruised further at 120km/h, until we found the autoroute blocked with police cars in front of us, with no choice but to exit the road and be greeted by 4(!) police cars. At this point we were certain they had registered us when traveling at high speed, and I was ready to part with my license. Turned out another road user had called the police stating two brightly colored Porsches had flown passed him, but they had not seen anything themselves whatsoever. So basically they had closed the road just to ask us to stick to the limits, and if they could take a picture when sitting inside the car. 
Lucky escape.
Another one involving the same GT3 RS's was on a very intense trip/stay at the LM24 quite a few years ago. We'd set off to Le Mans, both by coincidence with our licenses temporarily revoked (I know, I know..). We'd agreed to drive very carefully and send someone a few km's ahead to scan for any police checks to make sure we were safe. Unfortunately despite that precaution, we couldn't escape a blockade of the autoroute some 50km outside Le Mans as our scanner basically called it in to advise us the inevitable. We saw the weekend disappear before our eyes, ourselves and our cars would be stranded when the inevitable question came 'license and registration please'. Except, the kind policeman just waved us through, and we were on our way again towards a fabulous edition of the LM24. Upon arrival I'd done a few celebratory donuts in a grass field (it was a dry summer), when rejoining the road what I initially thought were cheers of onlookers, turned out to be warnings that my car was on fire. The dry grass on the hot exhaust, ... After everyone had donned their beers and waters to put it out, we were once again on our way.

Cool stories, Porker!
I once outran/drove the police without even knowing it. A friend driving on the same stretch of road by pure luck at that time saw me flying by, then a police car starting the chase. That friend told me the story a bit later and couldn't believe I was home and not in custody (or shot dead). Needless to say, I then spent a few nervous days when opening the mailbox... But nothing. Zilch. Since then I religiously stick to the law.

I had a similar incident in Spain year ago when I was driving a F355GTS from Madrid to Lisbon. About 30 km from the Portuguese border I came over a crest at a decent speed and found 2 Spanish police cars parked on the side of the road with their occupants standing around drinking coffee. I floored it as I figured I could get across the border before they could catch up.
My "Hairiest Supercar Moments":
We totalled a brand new M6 from a friend's dad. He was allowed to take it for a little spin on his birthday... Just as we were passing another car on the left, said car turned left and hit us in the back and we spun into a little wall. My friend (driver) did cross a full line but the other driver had been drinking and didn't use his side marker. His dad wasn't pleased to say the least.
Did a full 360 once in my first supercar - Peugeot 106 - on the highway in the torrential rain going to see my girlfriend who was home alone 
. I didn't hit anything or anyone but was a bit shaken up...
Other hairy moments always seem to include Porker (mainly involving the "law").

RaceCar instead of supercar but the scariest moment for me was having an engine grenade in a 911 at Daytona coming out of turn 12 onto the front stretch. It was geared for 205mph at the start/finish before corner 1 so it was probably around 185ish mph. Spun the car across the track and the pit entrance but thankfully didn't hit a thing. Nearly puked afterwards from the adrenaline though.

Well, following the current theme of this thread:
I was driving Eastbound through Indiana in a late model (at the time) black 996 Carrera going about 65mph in a 60 zone. Just as I began to slow down to exit at a rest stop, a state trooper started up from the side of the road and followed me into the rest area. When I parked, the trooper positioned his cruiser to block me from leaving. My passenger immediately got out of the car and asked the trooper if it would be okay for him to use the restroom. The trooper said “sure, go ahead”. I thought that was quite accommodating of him, but not proper procedure for a traffic stop. Just seemed a bit odd. The trooper then came up to my window and collected my license and began to tell me a rather lengthy and apparently somewhat agitating tale about his superior, and clearly fellow state trooper, back West of our location having radioed ahead about a black Carrera travelling Eastbound in excess of 125mph which he was unable to catch. I explained that I had been driving for the last couple of hours, and certainly the entire time we were in Indiana, and that the entire time I had been driving the car that it had not been travelling anywhere near that rate of speed. The trooper then asked if I thought that he believed that there was another black Carrera travelling Eastbound on the same highway. I pretty much just glared at him as I contemplated the possibility of telling him what I thought his beliefs should be and simultaneously trying to imagine why I would care. He was clearly being dishonest about any report of a violation happening within his state of jurisdiction or there was another Carrera. Neither possibility was worth discussing.
The trooper went back to his cruiser and ran my license through the computer and then returned my license with a written warning from driving 5mph over the posted speed limit.
By the time that Leawood911 returned from the restroom and rejoined me in his car, all I could think about as I drove away was how many hours ago was he last driving? And were we in Iowa or Illinois the last time he cranked the car up to 125+ speeds? I know it wasn’t Indiana because I had been driving for too long.

Sounds like the time I was pulled over in France in a Ferrari 360 Modena. My crime was basically driving a Ferrari on British plates in France.
Not exactly a hairy supercar moment but many many years ago, I was in France at Eurodisney with the family.
On the last day, while being in the park with the wife and kids, someone tried to steal our Cayenne Turbo in the Eurodisney parking lot. The car was parked around 50 meters from a major bus station but apparently nobody cared.
The thieves drilled the driver side lock (no other damage but I wasn't able to close the door anymore) and tried to steal the car but the alarm system was set to a different setting (now not possible anymore), so the honk/siren worked longer than the legal limit of 30 seconds. My luck.
Eurodisney couldn't care less about our situation, so we drove to the next police station, a pretty big one right next to Eurodisney. This was at around 5 pm.
We arrived at that big police station, fully fenced, huge building. After going inside, they first basically ignored us for half an hour (keep in mind we had two small kids with us and there was nobody else waiting). All police officers were of foreign descent, either Arabs or from African countries. Why I mention this? Well: They talked in Arabic or some African language with each other, which was quite weird for a police station.
Then, an officer came and of course...he didn't speak English. Thank god my wife speaks French fluently, I only understand it well and speak a few words. We explained our situation, the officer wrote everything down, no emotion, no smile for the kids, nothing. We then waited another two hours(!) for the officer to finish the report (required for the German insurance). During this time, we saw several police officers running around with many boxes of fresh pizza but do you think someone offered even a glass water to the kids?! Nope.
After the report was finished, I asked if I can leave my car overnight at the police station because the lock was not working. The officer said no. The parking lot of the (fenced) police station had around 20 or more free lots in front of the main building but they said it is not possible. Makes sense. 
There was another car with German plates parked there and I asked about that car and they said this car was confiscated. 
I begged the officer, explained the situation with the small kids and the hotel but he couldn't care less.
A friend of a friend (I made some calls) working at the German Paris embassy at that time offered to bring the car to the embassy and park it there. The embassy was over an hour (one-way) away from Disneyland Paris, so not really an option. Our experience with French police wasn't new for him. Intervening was no option, "they just don't care". 
I was so pissed at French police, so I decided to leave for Germany. We drove back to the hotel, packed our luggage and at around 10 pm, we were on our way back to Germany. It was November and pretty cold, I just wanted to go home. Wife was very angry as well, kids were sad.
In my frustration about French police, I was driving pretty fast that night. Safe (for me) but fast.
During that night driving back home to Germany, I think I triggered all available stationary radar traps in France on the way to the German border. I'm not kidding, I think I saw at least a dozen of flashes. I just didn't care. I was sure I will never return back to France, the experience with the French police was worst police experience I ever had (and I had to deal with real weirdos in various police forces ).
It took me around 10 hours to drive from my hometown to Paris for slightly over 800 km. On our way back, it took me 7 hours to get back home. 
I never received a ticket or anything from France but I also knew that it would be too risky to go back in the same car.

Well, at that time (15 years or so ago), some roads were still under construction. Regular travel time was 10 hours. 
I did Munich to Nice in 5:45 h. Or was it 5:30 h? 
Had to wait one hour for my wife and the kids at the airport there to pick them up (surprise, surprise). We left our house at the same time, she and the kids thought I would drive to work. Nowadays I wouldn't do this anymore, Swiss police would probably shoot me on the spot.

So I was a bad kid. By 17 I had been forced to graduate a semester early from high school. Turns out I did not like going as much as I enjoyed driving and fogging my brain. It as the 70s - like the TV show.
So while everyone was in school a friend of mine and I were passing the time racing around the local cities in the middle of the afternoon. Doing burnouts in the first three gears was good fun - fourth was too much in the city.
It being broad daylight it was easy for the cop taking a break at a park to spot us being a bit too Smokey. One quick look at him told me he was out to lunch. His motor is as not even running and I had a nice lead. Easy choice - for a 17 year old - run.
The chase was very brief. For him. He needed to follow me down a hill, brake hard, and then left up a hill. He did not slow enough, missed the left turn and slammed into the curb with his right rear wheel. That wheel became decorative yard art and I was as lost in a blaze of tire smoke at the top of the hill. This seemed to work out fine. Being an expert at these type of chases by that time we quietly made it though that neighborhood while tossing any beers or other unmentionable items out the window. Experience paid off as our next encounter, minutes later, was with a KZ1000 motor cycle cop. By then we had shut down speeding and surrendered to the motorcycle cop. I have my limits and I will not want to race a motorcycle and get him hurt - See I was a good kid.
At the Police station -
so the cop who wrecked got to officially arrest me. It did not help that all his friends made fun of him back at the station OR that they all took a close look at me and my car. He was pissed. I needed to call my house to get picked up. My mom answered. I asked to speak with my older brother who was nice enough to come get me. What followed was a few months of cat and mouse as I tried to keep my mom and the legal system apart. Eventually one of the court notices made it past my network of mail traps. When mom called the court to ask what had happened they were not amused that I had managed to keep all this private. Consequently the judge taught me the meaning of the word miscreant. Additionally I was always escorted through that city from that day on until I either parked or left. I was routinely issued tickets for no tire tread and lack of paperwork - even if I had tread and paperwork. I got the message and avoided Overland Park for a few years. I wish I could say this was an isolated incident but that is not true. I have had a really fun time driving. Maybe my silent Tesla makes more sense now
I still drive fast but I don’t get stopped.
Munich to Nice, which includes dricing through Switzerland, in 5h30min? That I would like to see....in my view that is impossible except you drive 180 km/h in Switzerland. Anyway, you are lucky that you did not get caught!
The Italian police once stopped me, they drove behind me in a Subaru Imprezza, near Imperia. My average speed was 197.2kmh instead of 100kmh. I was young and it was very dumb but I had a Murcielageo LP640 for the drive and I could not resist. I was not allowed to drive in Italy anymore for 6 months. After the police gave me a fine, they told me that it is a beautiful car and that they understand that one cannot drive solely with it...
