I had a 2003 Mercedes E500 with a Stone Leather interior for a year or so. That was way lighter in color than the Sand Beige. I don't remember the glare from the dash ever being a problem. The only bad thing about the light colored interior on the E500 was the same light color was carried onto the door sills. I am very happy to see that on the 997 these are black.
As far as maintaining the lighter color interior, the fact that it shows the dirt is helpful in that you know when it needs to be cleaned and where. I once had a Ford Mustang convertible with white leather seats. After driving on the freeway with the top down the back seat would be almost black with diesel soot. If the seats were a darker color you might not see this soot, but it would surely be there.
I think the lighter color is worth the extra effort.
By the way, my car is due to be built in October. I was unable to get the Porsche Sport Exhaust added to my order.
