"How much" is a matter of opinion but, my 2 cents: There is most surely a significant and noticeable difference in my car between the 2 modes.
On a smooth freeway it is hard to notice. However:
1. In a curve at high speed, the Sport mode reduces lateral body roll and the car leans a lot less.
2. Under full acceleration, the Sport mode reduces significantly the front to rear weight transfer. Car doesn't "squat" as much.
3. On a bumpy road, the Sport mode is for me kinda brutal for driver, and especially so for passenger.
4. If you take a **bumpy** corner at high speed, the car feels unsettled in Sport mode. It feels as if the suspension is so stiff that the wheels bounce off road surface and lose contact either on peaks or troughs of those bumps. I am no professional driver/tester but I do suspect this is the source of many complaints against this setting in magazines and among users.
So in the end, this system leaves me in a quandary. I like it stiffer
but then the ride becomes too harsh. Maybe the Turbo is just perfect the way it is, being designed as a supercar daily driver. Maybe somewhere there is an after-market coilover system (HRE PSS10 vs. Porsche X73) that strikes the perfect middle ground: stiff yet still compliant.
BTW, when I see speed bumps or when exiting driveways with steep slope, I hit the Sport button so that the suspension stiffens and the front lip is less likely to bottom out.

My old 997 C2S Cab was night and day between the two settings. The Sport PASM use to make me nauseous at low speeds on anything but smooth tarmac. It was just rock-solid.
With the new Turbo I can hardly tell the difference!
