The production date is the date the car is completed. You can get a certificate of authenticity from PCNA for $25 or $30. Mine was part of the purchase price of the car, thrown in by the dealer. It took me about one month from the production date to get the car (it got stuck in the Baltimore customs area because of a big snow storm - I took delivery on Feb. 20, 2006 and it was produced on Jan. 25, 2006). Given that you're in California, add an extra week or so to the one month estimate. Your salesman ought to be able to give you a decent estimate, although the date may slip if Porsche is introducing a new model (unless you're getting one of the new models).

Really? certificate of authenticity? I received one in the mail a couple months after taking delivery of my car. I wasn't aware that we had to pay PCNA for one or that it was part of the purchase price. This was never even covered at the time of purchase. I just assumed that everyone who purchased a Porsche automatically got one.

May want to manage one's timing expectations vs P shipping inefficiencies....the last 4 new P's I have spec'd (997TT and 996TTS) each completed produc on-sched and then sat in Germany for 3-6wks waiting for a boat.... 
On my Jul06 produc 997TT I asked PCNA if they could airship car into SF/US to save some 3-9wks of waiting...and learned that P was apparently not set up for airshipping
Major SF F and MB dealers routinely airship F's directly into SF and CL63/65, etc directly into LA for impatient car nuts willing to pay for immediacy....and to lower risk of shipping damage...

FWIW, here in Sydney I was given a production date of "Week 36" which was the first week of September. I thought it could take a while since I've optioned a lot of extra leather bits like PCM face etc. I didn't dare check until yesterday, when I was told the car had been built in week 35 and was already on a ship to Sydney. You guys can probably imagine the grin I was wearing all day! My sales guy e-mailed me a screen dump from his PC showing build date, all options, engine and chasis numbers, ship name TEXA (an abbreviation I guess) and delivery date of November 15. Having now waited since February the time seems to have flashed by, and since I'm quite busy the next few weeks, the rest of the time will be nothing.
Next job for me is to figure out how I break the news of my new toy to the wife!

I know that PCNA charges for it, but the salesman told me they were going to include it in my deal. I bought mine from Porsche of Tysons, in the Virginia suburbs of Washington, DC. That dealer is owned by Roger Penske's firm, Penske Automotive (formerly named the United Auto Group), and they are real sticklers for getting all the details right. That's why I bought it from them. And I assume it's part of what the salesmen are told to do.
