I think having full fluids is a good idea, but why a passenger?
This is why the AMS figures are different from factory. They run with 100kg of ballast (passenger and timing gear).
Using math it would appear 100kg is good for at least 0.1s on 0-100 and 0.35s on 0-200.
If you correct for comparison to Porsche factory figures (test driver only) the times are about right...

If the older GT3 RS4.0 had a better launch it would have beaten the faster shifting PDK-S to the 100 Km/h mark. I'm still not seeing that significant of a difference between the manual and the PDK-S.

1433kg measured weight.
ISO and 18m test car the fastest overall. 991 GT3 is faster in curves then 997 GT3 RS 4.0, in fact as you will see in forthcoming Supertest faster around Ring as well.
Optional PCCBs produced the best braking power measured so far by AMS.
Only two minus things are not so good straight line stability and bad wet road traction(which is expected due to UHP tires).

Hi Mate. This is interesting but the white speedo 991 GT3 footage was filmed on a damp road in germany a month ago so not a like for like senario I suggest...

Hey macca -- you must be mixing up 991 GT3 launch videos, as the road surface is dry in the original source video...
...991 GT3 (PDK) is quick off the mark with launch control, but a 997 GT3 RS 4.0 (manual) accelerates faster above 100km/h...
