For example, you can't fit a big suitcase in the rear by folding the front seats ... while it's a "piece of cake" doing it with the Targa.

I think the main reason is that Targa lost its popularity when the actual top roof didn't come off, IMO. 993 Targa looked good but it was the start of bigger sunroof as opposed to complete removal of top, a la Carrera GT.
Even though the Targa looks nice, and I'm sure has taken a lot of engineering time in design and so forth, but I think in the U.S. if you want a bigger sunroof than your coupe you just get a cab.
