People who can't get a 991.2 GT3 Touring right now from the start will have a hard (and expensive) time to get one in the future, even used. I'd say that after the 991.1 R, the 991.2 GT3 Touring will be one of the most popular "collector" cars. The number may not be artificially limited but production has to end pretty soon eventually because of EU emissions requirements.
