Touch screens in vehicles for controlling anything more than the infotainment are a way to fool customers into thinking it's modern and futuristic when in fact it's manufactures saving costs, screens are cheap and simple, but I'm practice are much more inferior ergonomically thatn physical noobs and buttons... do you see many touchscreens on planes, racecars, motorcycles, etc where ergonomics and function are most important?

Just to be clear, we are talking about  "touch"screens taking the role of physical buttons in moving vehicles like a car, not about digital screens displaying information on vehicles, those are very useful.
