Hanseat has a great reputation. I did Scuderia S7 my first time and it's cheaper and shorter than Hanseat but I still found it excellent.

I did Hanseat a million of times before I started racing in the VLN series. Back in the days, it was top-notch (and priced accordingly). Best way to learn the NS. Did S7 once or twice when they started. Not in the same league (especially for beginners), but good too.
Not sure how they are nowadays, but you probably can't go wrong with either one.
Scuderia Hanseat is top notch. They replaced all old instructors with new one all having racing pedigrees. You get tons of driving a day ( actually too much to handle it all ) and nice food. AMG brings their cars to do one of the F1 track section. Price is high. Courses should be on, even if in a restricted version.
Otherwise you have the classic track days organized by Destination Nurburgring, Schnelle Schwaben, Pistenclub, etc.....
We will be at the Ring at least end of June , middle of July ( not me) , end of August .

We've been to Monza beginning of this week; next might be Mugello.

I get yu ( many do buy a cheap pair so if they stop running they haven’t wasted their money )
Thought it would be wise to learn and rag a hire one around a track so I sort of know the ceiling points of capabilities for when I take my Bessies on the track..
If I get too clever I would rather it be in the rental

Use the 720S, you can learn more.
May could be still a month of travel restrictions but maybe you are lucky...mid April (after Easter holidays) will very likely the decision period for opening Germany to travel.

Dear participants of the Scuderia Hanseat Spring Course 2021
We are pleased to inform you that the spring course 2021 is almost fully booked, currently there are only 3 seats left.
As a participant, however, you are certainly asking yourself whether the course can actually be held. This question also concerns us, therefore we are in constant contact with the Nürburgring to guarantee compliance with the currently applicable requirements.
Our CORONA concept for the event last fall was rated as "exemplary and professional". We can adopt this concept, with some minor adjustments, for the 2021 spring course. The changes relate in particular to the type of hygiene masks and their mandatory today’s wearing regulations.
As we all know, regulations can change weekly, sometimes even daily. However, we are confident that we will be able to hold our spring course as planned, in compliance with the specifications from our CORONA concept. For understandable reasons, we cannot publish the version that will apply to the event until shortly before the course.
If the course cannot be held due to an official order, the participants have the choice between a free rebooking on one of the next courses or a refund of the already paid participation fee.
We are looking forward to the spring course and to four great days at the Ring with the Scuderia family.

Writing this on our way back from the Ring and Spa, stuck and stoped on the highway for the last 2.5 hours because of some major accident.
We had two fantastic day at the Ring, one day Touristenfart followed by the Mantey track day.
We met up with M3ike for a beer and saw Kobalt a few times. Always good to chat face to face with Rennteamers.
We then headed to Spa for another track day , half sun , half rain. Good training !
