It really depends on how good the driver is.
For mediocre drivers, the 996 Turbo would be the best choice.
For experienced and skilled drivers, the GT3 would probably be a good choice, maybe the 997 Carrera S with 20 mm chassis/LSD too but it really depends on the personal preferences (I love to have the PSM/ESP "safety cushion" in the background, especially for street driving).
For really experienced and highly skilled pros, the GT2 Mk2 would blow away the 996 TT, GT3, etc. all together. Excellent straight line performance combined with an incredibly good suspension setup result in a fantastic car.
If I would have had the money, it would have been my No.1 choice.
So there is a Porsche for every type of driver skills.
If you just want to know which 911 is the fastest on the track and the fastest regarding straight line performance, it is the GT2 Mk2. But driving a "light", bi-turbo charged rear wheel drive 911 without ESP or electronic traction control system at the limit isn't an easy task.
