I have the LWB in my GT4. They are comfy but for sporadic use. Getting in and out is a pain. If I were ordering a Touring, 4-ways would be my option.
Again, it is a personal choice. Difficult to recommend.

My choices lately have been all over the place, went from placing a reservation for a Tesla Model 3, which I don't want anymore or probably won't get anytime soon, to nearly purchasing a 993, and finally while on a ski lift in Colorado my brain and heart decided its time to get the GT3 Touring.
My 991.1 S with 4-ways will probably stay so I think it makes more sense to go with the buckets with the Touring.
The folding buckets are lightyears better than the 918 seats, in any which pay possible.
Since we can't get those here in North America, and I have like 5 cars with those seats, I always look forward to driving Porsche's fleet with the folding buckets.
Also had back to back seat time in a GT2RS with both seats. Porsche has a factory car with the folding buckets at Leipzig and mine was with the 918 seats. Folding win hands down.

I am 1,83 cm (6,0) and +1 is 1,59 cm (5,3), hence I am more inquiring for potentially her using the car and I thought that besides this side protective thingy there might be something like a cushion available.... Currently, all we have to do in our other cars is to put the seats either up or down completely... (however, first thing I checked was whether my helmet fits and it seems that I just have a bit more like 1 cm headroom 
)
I really like the electrical height adjustment of the 918-style LWB's (and the slightly wider bottom bolsters). Goes lower than folding seats...

Sun prefers LWB 918 as it fits him better at 165#, The folding ROW buckets in the 2015 GT3 in NZ: the wings spread too wide and support less, and yes as Grant points out, the 918 lwb goes lower. But it is easier to get soft luggage in back w the ROW. The Labs could care less as they slip between with no folding needed.
