There are some shops that are doing engine builds in my area, but they are asking US$40k+. Curious what a RUF or Manthy motor would cost.

Ah, interesting. So, if it's not a crate motor from a 997 GT3 RS 4.0 then it probably is a custom build with Individual Throttle bodies (much better than the Standard fare from Porsche).
Pretty sure that $40k will not come close to buying a motor like I described above. These guys in Oregon build motors that are capable of the specs above and would likely cost $60k or more:
