If I remember correctly my late-June build for my 2006 S was very unusual because of the heavy demand. It was unusual because it "should" have been a 2005. New MY (this means 2007) normally should start in August; at least that's what I heard.

Build year in Europe in car documents in 2006 if car is build in 2006. But, if it is build after July 2006 it is MY2007. I am talking about manufacturing MY not about documents. If your first registration is 01st August 2006 your car is MY2007 but in documents(in Europe) it states that car is produced in 2006.

I'm afraid this is incorrect. The model year of a car is coded into the Vehicle Identification Number stamped into the car by the manufacturer, and not dependant on the date of first registration bythe owner.
Say a manufacturer starts production of a brand new car in May 2006, then he can define it as an 07 MY car, because it is unlikely that he would introduce further spec changes to the car before the start of calendar year 2007.
That model would then usually become an 08 MY car as of August 2007, because spec changes tied to a model year are routinely introduced during works' summer vacation periods in August.

This Model Year thing is funny. In my country, back in the days, MY 1987 started July 1st, 1986.
Then they suddenly decided to drop this crap and made model years begin on January 1st as it should. So, a July build or a November build are 2006.

Routinely yes, but as I said, if a manufacturer starts production of a new model during the first half of calendar year 2006, he can also designate cars built before August in that year as being MY 07 cars, because there wouldn't normally be any planned spec changes between cars built in July or September of that year.
The MY code in the VIN number serves as confirmation for car registration authorities that a particular car complies to a particular status of type approval or certification requirements. If, for instance, there is a major update in a car's ability to fulfill exhaust gas emission requirements, then it would be introduced with the change of model year.
